They believe that specialty coffee should not represent a processing style, but rather reflect the terroir (natural environment) in which the beans are grown. To launch this catalog of terroir expressions, producer Jamison Savage planted several different varietals at various elevations on the property without removing or altering any of the natural landscape or forest. He believes that the farm's impact on the ecosystem should be kept to a minimum, allowing the coffee cherries to fully express all the natural flavors and elements present in the region. With this ethos in mind, Finca lris Estate is developing as an expression of what super specialty coffee farming can be, and it is their goal as growers to share this commitment with as much of the world as possible.
