Only ripe cherries were hand selected and placed inside crates with a special plastic lining before being sent to our Lab in a refrigerated truck. 12 hours after being picked cherries were floated using a citric acid solution and cold water to diminish the microbial load from the post picking process.
Once in the lab cherries were placed inside our custom made fermenting vessels. Cherries were inoculated with our house culture of Kviek Voss and Lactobacillus Plantarum. They would stay inside the vessel for 4 days under pressure from the naturally occurring CO2 from the fermentation process. After the fermentation process, cherries are placed in our custom drying trays, each tray holds 4.5 Kg of cherries.
