Panama Maragogype Don Benjie by Lost Origin Coffee Lab

This lot was harvested on February 1, 2023. Cherries were selected at peak ripeness and manually selected after harvest. After selection cherries were placed in individual 20 Kg crates with a special plastic lining to avoid oxidation and sent to our Lab in Panama City on a refrigerated truck.
Upon arrival at our Lab, cherries were floated using a citric acid and cold water solution to diminish some of the microbial load from the post-harvest process. 110 kg of cherries were placed inside our custom fermentation vessels, and KVIEK VOSS yeast and Lactobacillus plantarum was inoculated to promote a healthy fermentation environment.
After 7 days inside the fermenting vessel cherries were placed on individual drying trays and dried in our drying rooms for 22 days.
